Even though running small businesses is profitable, sometimes I have to compromise on factors like having fresh food. The rush times will face more flawed cooking and one thing I am doing really mindful is reheating the food properly. Since many of you are asking about my reheating habits and safe methods, I thought about sharing some information that I learned in the past few years about reheating and what is the maximum amount of time allowed for safely reheating food. Whether it’s a leftover of your favorite dish or any extra portion that was made in advance.
What is Reheating Food?
Recently, I shared many details about batch cooking and tips. Reheating is like warming up our previously cooked food for consuming it again. For those who prefer batch cooking or trying to not waste your leftovers, reheating will be the best option. You can save time from cooking on a daily basis as well as save money by not wasting it.
The main thing I care about is the temperature control and the number of times you can reheat your food. It is much more dependent on the type of food.
How Many Times Can I Reheat Food?
You may know how the food should be stored, especially TCS foods. This is all for preventing bacterial growth. Most experts are also telling you that you should reheat the food only once. If the frequency of food is cooled and then reheated multiple times, then it becomes the danger zone for bacterial growth. The more times you heat, the more chances of contamination there. So the best thing to do is heat only the needed portion before having. Don’t take all the food and eat it.
What is the Procedure for Reheating Food?
From Monday to Saturday I will always be in a rush and that time I planned to do the batch cooking to avoid that much time consuming. But I was not aware of the perfect procedures and made some mistakes in this area. But now you can call me the master of reheating. For avoiding my beginner mistakes, just read these steps.
- The very first thing is to make sure the food is stored properly. Otherwise it may have chances to get food poison because of bacterial growth. I am using a refrigerator to store the food, Especially give more care for TCS foods.
- If you are planning to reheat the food, bring the food up to a temperature of at least 165°F (74°C).
- The third step is you should use the appropriate method, like a microwave, oven, or stovetop, depending on the food. You can’t try iron box methods or any other tools and gadgets. All parts of food and everything should reheat equally.
- For this, you should check the thicker and thinner portions in equal parts, just to make it more perfect.
General Guidelines for Reheating
Sometimes I feel that I have very short memory and frequently forget some important steps for what I do. So I’ve created my own mental checklist over time:
- The very first thing is to reheat the food until it’s steaming hot: Just warming up will not be the exact aim for this. My sister usually doesn’t like hot foods, so she prefers just warming to lessening the cold from the fridge. Believe me, this will not be good for your health and wll cause so many gut issues.
- Avoid reheating leftovers more than once: As mentioned above, take only the needed portion from it and reheat. This will prevent reheating the food multiple times.
- Don’t leave reheated food out for long: If you reheated food, make sure to serve it as soon as possible. IKeeping it outside for a long time will make it more vulnerable to affect bacteria.
- Stir the food: Even if you’re using a microwave or normal gas stove, make sure it is stirred properly. This will help to reheat evenly and mix it.
What Methods of Reheating Food are Safe?
You can reheat the food with plenty of options. I will share with you the best options I have been doing recently.
Microwave
This seems pretty much quick and easy. I have recommended covering all the dishes to prevent it from drying out. You should also remember the timing to set depends on the thickness and type of food. This is my most used method every day.
Oven
If you have to heat certain foods like lasagna or casseroles, prefer the oven. This will reheat such foods in proper care and in a better way. You don’t have to stir or mix that lead to spoiling the food. Oven will give you even temperature without any effort or losing the texture of it.
Stovetop
If I have more time, I prefer this. I can feel this more like fresh cooked food. This can be perfect for certain soups, stews, and sauces. Just imagine the hot soup from the stove by sprinkling pepper powder on it! Wasn’t it yummy?
Steam
I tried this method for delicate food and some foods that are made from steam itself. Once I tried a food that popular in Asian countries, biriyani. I never knew the proper amount and made it in large amounts. Later, the first portion reheated using the microwave but not that much fresh I felt. Later I tried this steam method, the main ingredient ghee just melted on all rice and got the best delicious fresh biriyani ever.
What Foods Can Be Reheated?
In my kitchen, I’m pretty much selective about what gets reheated, stored in the fridge and one time meal food items. Some foods are totally safe for a second round, while others can pose risks:
- Safe to reheat: Usually most of the food like rice, meats, pasta, soups, and casseroles are good to reheat and have it. This will not cause you any health issues or affect your gut bacteria.
- Be cautious with: There are some foods like fish, shellfish, dairy-based dishes, and eggs. These can spoil quickly and lose their texture when reheated. You may not get the real feeling of having fresh food while eating this after reheating. Also have chances to get bacteria in this kind of food easily.
Why Reheating Food Temperature Control is Important
You know I love cooking and having it make my gut dance for a while, but food safety is just as important like cooking. When your food isn’t reheated as per the correct temperature and proper method, bacteria like Salmonella or E. coli can enter and grow very quickly.
This may lead to several health issues like food poisoning and gastric issues. I guess nobody wants to struggle by just eating food. So it’s very important to give the critical temperature to aim for is 165°F (74°C) to kill any lingering bacteria.
What is the Maximum Amount of Time Allowed for Safely Reheating Food?
Now, this will be the most important thing you should notice while reheating the food. The maximum amount of time allowed for safely reheating your food is 165°F for two hours. This is the general rule and can differ as per the quantity and type of food.
For example, you will take more time to boil two bowls of soup than a cup of soup. Especially gas stoves. In other cases you can set the time that you want for the food to reheat properly. The total two hours is for both getting back the food to normal temperature and reheating.
If you have to know the minimum amount of time allowed for safely reheating the food, the answer will be at least 165°F for 15 seconds. This will give you the essential temperature that prevents bacteria growth.
How to Reheat Food Safely
You can use the methods that are mentioned in this blog. If you are referring to some more safety tips for that, I can give you my secret hacks. The very first thing is close the container to make it reheat very quickly. For instance, you can boil the soup faster if you cover it with a top. This can get more pressure on it and help to boil it more faster and avoid other dirt or dust to it.
You should also be careful about the type of foods before choosing the methods of reheating.
Reheating Advice for Different Foods
My reheating food methods were kind of experiments once. Through so many mistakes and successes, I’ve learned that each food needs its own TLC when it comes to reheating. So here comes my best advice:
- Rice: Reheating rice should be done in a very careful way. The first thing you make sure it’s piping hot throughout. Otherwise the leftover rice may have chances to grow bacteria if stored improperly.
- Meat: If you are reheating any type of meat, it’s better to use the oven or stovetop for best results. You can always check the internal temperature of it.
- Dairy: This is a fast reheating food item. Because any small mistakes will ruin the entire food item in just seconds. Also be careful with cream-based sauces or soups. They have chances to separate or curdle, so reheat them slowly.
- Fish and Shellfish: These are pretty much tricky. So you should reheat it gently and avoid the microwave unless you’re in a rush.
I hope now you may get the detailed idea from the most experienced person like me. The main thing you keep in mind is reheating the food isn’t just about the convenience, it’s about keeping your meals more safe and tasty.
